Sausage Making Class with Chef Carbone
Thank you everyone for your interest in sausage making and I hope you love as much as I do! Tonight, we will look at the modern methodology & techniques of basic sausage making. We will start with what is familiar to almost everyone, the Italian sausage with fennel and build off that. In the kitchen tonight we have an array of both traditional and non traditional ingredients to have fun with … Artichoke hearts, Blue cheese, Olives, Red curry, Roasted peppers, Coconut milk, Provolone, Mac & cheese, Hot pepper garlic paste, Kim chi, Mozzarella, Sesame oil, Caramelized onions sesame oil and Chinese Red BBQ.
We will use a cannister extruder, as well as the traditional funnel method. We will learn the finesse it takes to properly use & keep salted hog casing and how to make links. Then of course, we cook! I hope this seminar class gives everyone the confidence to have fun with the technique and the desire to go home and make your own sausage creations!

Basic Pasta Making Class
Learn to make and knead fresh pasta dough by hand and with a food processor. Will cover flavored dough and cutting techniques including linguine, fettuccine, pappardelle and corzetti.
